Picked up a 20lb Brisket from Costco recently and put it in the freezer. My son is home for the weekend (from College) so hey it is brisket time.

Simple Salt and Pepper, wrap and let sit over night.

Started it at 7:00 pm tonight and will let this go all night (or until done). Too big for the Smoker so I had to cut a piece off.


235° on the smoker (this will get me about 225° to 230°.


Pitmasters Choice in the Tube.

Finished! I am pretty damn pleased with this one! Moist, Smokey and seasoned very well. It hit 155° at 1:00am so i decided to wrap in foil and go to sleep for a few hours. Got up after around 4:30 am and it was at 196° on the small piece I cut off and 190° on the large piece. Pulled out of the smoker and into a cooler for the night.

Here is the small piece sliced up (brisket and eggs for the wife and I son does not like eggs).

All in all this was a very good smoke. dinner tonight and lots of left overs for the freezer.

Looks great,best part about overnite brisket is brisket and eggs or hash if hou ask me!
 
Looks really good, Link! Freezer leftover brisket is great for sandwiches or whatever. We just had leftover point last week with mashed potatoes and gravy :-)
