Been a few years since I've posted but thought I'd post and say hi and thank you to all our veterans and their families who have made the ultimate sacrifice in defending our freedoms.

Found a 5#er at Costco so decided to do a brisket instead of spare ribs.
All rubbed down with SPOG and waiting on the smoker to get to temp.
I use an old coffee can to keep the lit and in lit coals separate, pulling the can out with pliers.
And here we go! WSM holding steady at 225°.
 
I've hit the stall. Been at 160° for a little over an hour right now. About to mist with some apple juice.
Went ahead and made some corn bread muffins for a side
No smoke would be complete without enjoying some cold brews while you wait. This is great on a hot day with the smell of mesquite in the air.
