This turned out to be the best one that I ever did - probably have done a dozen or so anywhere between 5 - 6 hours each and they were OK. This one went 15 hours and it all just fell apart, very moist!

I get up at 4:45am for work and am on my way to bed ... I may pull it cold or toss it in the oven for a reheat before I crack open the double wrapped foil.
I'd pull it while still warm, it is easier to pull, and you'll be able to discern any hunks of fat or etc that you'd rather trash.
And then put the PP in fridge, it'll reach safe cold temp faster and not warm up your fridge.
