Good bean recipe by gary s I recommend.
I used a Chipotle rub on the pork butt and in the beans. The beans also got a cup of Chipotle Sweet Baby Rays.
Honey and brown sugar , an onion with a bell and 2 jalapeno peppers. Bacon of coarse. 55 oz can of regular Bush's.
RIP Duke the Bush's dog passed away just recently.



The pork is a boneless 8 lb that took 14 hours at 225-240°.
Chipotle rub with extra SPOG and brown sugar. Mustard binder to stick it on.
Beans under the pork after 4 hours to catch drippings. Took the beans out at 8 hour mark. Spooned off the fat drippings when the beans sat an hour. Tasted really really good. I covered and refrigerated the beans to eat today.
The butt came off and rested covered in foil for an hour and I pulled it at like 12 midnight. I drained the liquid from the pan and refrigerated that for today when I have time to add it back in with some Sweet Baby Rays Chipotle.

I put the butt in a foil pan with a 16 oz bottle of Apple juice after I took the beans out. When the butt had been at 165 for a half hour I went and foiled the butt with the juices till 200°. My personal opinion on foiling with liquid for pork butt is that it's going in sauce into a container in the fridge and warmed back up. The bark is all going to be in there and taste yummy. The bark tastes good and the SAME as if it hadn't been foiled. I eat cole slaw on my pulled pork so crisp bark is a non factor. ;)
New shredding claws worked great. Love those sharp claws.

Beans cooked under a port butt are the bomb. Those look amazing. I've never tried the peppers in mine but that sounds great. How do you like the claws? I've always just pulled the pork with my hands but have been thinking of getting a pair of claws if that would make it easier and/or faster.

Yeah they are cool to use. They dig up and toss the meat well. They cut through the bark better than forks and don't clog up .
$10 at tractor supply.

Looks great. Nice job on the pork butt and the beans. I kind of wish I had the vertical setup to be able to try a bean recipe like this. Maybe I could fire up my old Brinkmann for posterity and give it a try that way. Glad you had a great cook.

That sauce isn't very spicy at all. I'm going to add the juice and some rub back into the meat , along with the Chipotle Sweet Baby Rays. Kick it up a bit. I think that sauce is safe for people that don't like heat. Nice deep richness and sweetness.

I think i will end up vac sealing half of that stuff :D

Sure does help pass time at work being out here between customer orders I get. I'm out here too much some days.. yapping it up.
 
Update pic.
Here I took off the fat from pork butt juices.. had some Apple juice in the pan when I drained it out..
Put the jelly looking dark sauce in the slow cooker and mixed in a bit of rub and water into some Chipotle Sweet Baby Rays.. meat is mixed in and warming now also. Got Cole slaw and potato salad with beans .. feasting in a few..

Nice job Johnny. That butt looks great and the PP looks real fine. I'm like you--gotta have coleslaw on a pulled pork sammie. After I got my last butt pulled, I went to the fridge to get the makings for coleslaw an there was NO CABBAGE!!! Just wasn't the same.
