    Thanks, How my little get togethers work is I provide the meat, and my friends bring the sides (and plenty of beer). There was german potato salad, a veggie tray, and chips and guac/salsa, and some take and bake rolls. But its a free for all once we get going haha so no nice pics of the spread...

    Wait, smoked at 180? But as far as time, I always give myself plenty of time, you can store it in a cooler for hours, or even in an oven in a pinch. Never done hot and fast myself.

    Probably already mentioned, but dont let rust worry you. I use oven cleaner, some steel wool, soap and water, then season with some oil. Scrub it out then heat up and rub some oil in to season. Cast iron is probably the safest best, I dont grill lots of fish, but I'm nervous about it falling...
