Water versus Sand in the WSM?

As said above, the water, sand, saucer (whatever) will keep the temps lower.  I use a clay saucer covered in foil for easy cleanup.

    Hot n' Fast Pork Shoulder

Great use for the paella pan!  I also do brisketts at higher temp (foiled after color and bark set) with no problems.

    WSM Mods

I thought of doing the mod above but instead I used my dremel cutoff wheel to make a little slit in the lip of my WSM wide enough for two probe wires and deep enough so the lid doesn't crimp them.  Works great and I don't have to fit any probes through a small hole or leave them inside the...

Seeking Advice - Horizon 16" Classic v. Big Green Egg

I've got three eggs, a Backwoods Party, WSM, weber kettle, Weber Summit & Genesis, and I have had an offset stick burner.  If you like tending the fire, go with the stick burner, but don't believe you have to throw logs on the fire to make real BBQ!  Ya know, pellet grills use real wood to cook...

    What type of smoker?

The green egg is a great cooker for both grilling and smoking.  I have three, including one about 30 years old made out of clay that is fantastic for low and slow cooks.  Does the best turkeys I've ever had.  My typical workday runs about 14 hours so sometimes when I get home I just want to fire...

    Glad to see it!!

I guess that is my concern about the traeger from looking at the pictures and specs, Joe.  Sound like most people who got them end up trading up.  I'd rather not invest the time in learning a new cooker only to move on to another.  steve

    What type of smoker?

Not sure which Brinkman you have.  The offset is a tough cooker to work with but the water smoker can produce some good results without too much work.  I've got a couple of gasers in my collection.  My weber summit has a smoker box and dedicated burner but the results are less than impressive. ...

    Hello from Maryland

Will do that Randy!  Offshore pictures show a lot of water, sometimes a bit of carnage, and once in a while a good fight.  Had a good run of yellowfin a few weeks ago but most of them are heading up north.  Send me a number and I'll give you a call if we slam them again.

    Glad to see it!!

I'm thinking hard about getting a pellet smoker.  The Yoder sounds like a pretty good one but I might end up with a traeger only because I can buy one from cabelas with my club points so it won't cost me any real dollars.  Just not sure I will be happy with it--sounds like the control is a bit...

    Hello from Maryland

SmokinHusker, it looks like you can give me some pointers on sausage when I am ready to try.  That will be after I try some cold smoking.  I've got a few points to spend at cabelas so I am thinking of buying a cookshack or cookshack style electric smoker.  However, they also have some pellet...

    Hello from Maryland

Thanks for the welcomes.  If I get offshore this weekend I'll see if I can snag a yellowfin to share.

    Hello from Maryland

Hi all.  Just joined and looking forward to some conversation.  Not new to smoking--started many years ago smoking fish with a brinkman water smoker, added a small offset and then about 25 yeas ago got my first green egg.  Have several eggs now, a couple of weber gasers & kettle, and recently...
