I have been using the water pan on the right strictly as a baffle, and drip pan, no water in it. My temps were running slightly higher on the far side so I put water in there and it has been running even ever since.

Oldschoolbbq, the lime mayo was OTC, I believe it was a Best Choice brand. You could probably add lime juice to regular mayo to achieve a similar taste though. This is the first time I have cooked with it, I'm going to be looking for more things to use it on now.
