    tri tip help

A trimmed tri tip should be a single piece of meat and generally look like this picture. Never heard of tri tip that is 1) as small as you have indicated LBS-wise and 2) cut into pieces. It may be tri tip per se, but not in the traditional sense. Maybe grill the pieces up until 130-ish?

    WSM door leaking

I've got the 22.5 WSM. The stock door leaked pretty bad. I was still able to control temperatures pretty well, but I always felt I wasn't getting the most efficient burn. I got the cajun bandit door and it's a significant improvement. The latch tension can be adjusted for a rather close fit. Now...

Eye of Round I have extra $2.69 per pound

On a similar note, I was surprised to see Costco had its choice eye of the round at $2.69/lbs today. I bought a ton for jerky.

    WSM 18.5" Charcoal Smoker

I have the 22.5 and I have added the door upgrade. To me, it made a huge difference in controlling air flow and some heat retention. I’d get this without question IMO. I have the lid hinge installed as well, but I would not say it’s a must. I agree with the others in securing the charcoal...

    Thrift Store Find...

I don’t know how it made it to the floor. My guess is that was due to the box being almost unrecognizable. Either way, I was very happy. The wife didn’t understand what the difference was between the kettle, the spirit and the WSM that reside in our yard. I assured her it was well worth the...

    Thrift Store Find...

Made a donation run to the local thrift store over the weekend. I always like to pop in just to see if there is anything interesting that someone has parted with. Well, I noticed a mangled, but still intact Weber box in the corner. Couldn’t immediately tell what it was. Low and behold it’s a...

    WSM 22 - Door ajar?

+1 on the Cajun Bandit. My WSM 22 door was always a little off. The CB door is perfect and you can adjust the tension to get a real tight fit. Money well spent i my opinion. Much better and consistent temperature for me now.

Looking to Buy First True Smoker... Input & Guidance Appreciated!

Great to hear. I went through four or five smokers before i got my WSM. I have no desire to own another smoker. I love the ability to do overnight cooks without a worry in the world. You made a great choice! I did upgrade the door on my 22 and added the hinge. Both worth the investment to me...

Vacation brisket with no smoker available. Oven?

If im in your shoes, i do the smoke before leaving - smoking and slicing the brisket as you normally would do. I would then use a vacuum sealer to seal the appropriate amount of slices and burnt ends and freeze/place on ice for the trip and then reheat in water, in the bag when you want them...

Kingsford Briquettes vs. Royal Oak Ridge Briquettes: Burn Temperature, Time, and Ash Comparison

Based in part on this thread, I recently switched from Kingsford Pro Comp briquettes to Royal Oak Ridge. I am a convert. I’ve found the ROR burns cleaner and provides a more consistent, more controllable temperature in my WSM 22. The ROR lasts significantly longer and requires less time to...

    Choosing a new smoker

Not sure I've ever paid much attention to the lid...other than mine fits on the body just fine. Does it "leak" a little smoke? I guess, but it hasn't seemed to affect the meat or heat retention. Just to clarify, I agree with norm, my WSM generally stays with 15 degrees of target and on longer...

    Choosing a new smoker

I've had mine going all day....haven't needed to reload charcoal or adjust whatsoever. I do overnight smokes on the WSM all the time without any worries. I do have a Maverick wireless thermometer with a temp alarm just in case. The WSM is the best smoker I've owned. As you're doing your research...

1st overnight smoke on my WSM

I always set the Hi/Low temperature alarm on my Maverick before going to bed when doing an overnight cook on my WSM for insurance purposes. Never once has it gone off. For me, the WSM is as close to a perfect non-electric smoker as you're going to get - always consistent temps and turns out...

    Which smoker to buy

My $.02 is to take a look at Craigslist and see if you can find a cookshack. I was able to snag a SM 008 (current model is SM 009) for $160. These things are built well, have relatively few issues and work real well for an electric. Doesn't need a single mod and I'd really efficient with chunks...
