Made up a 5 lb batch of venison slim jims yesterday. Hung them in my Bradley 6 rack with hickory.
Looks good. Did you use a mix or did you use your own recipe. Great job.
Sometimes i use a mix. When i do its either the LEM, PS Seasoning, LEGG #116 or Cabelas. Most the time its my own.
Got them cut and vac sealed this morning.

Now your snack sticks look awesome and I bet that they really taste good too. Now I wouldn't call them slim jim's for they are made out of alot of chicken parts is pieces. I didn't know it either.
Man when I read Slim Jims I was picturing small snack sticks but those suckers are huge. Do you eat them like a Slim Jim or more like a sausage?
I normally use 17mm collagen but am out. These are 19mm
