Injected it and rubbed it last night and put it on around 8:30 this AM.
Wasn't planning on wrapping this one, but instead spraying it every half an hour with apple juice and rum. Thoughts?
last brisket I did I id t apple juice spray and did not rap it and it turned out great I think u would be fine
I would bet that it you gave yourself a spirits in the mouth every time you gave rhe roast a spritz, that buy the time it's done it'll be the best brisket in the world!
This little flat is really flying. It is only 3 lbs.
Thx, think I changed my mind and will wrap it at 160*, just cause it worked so well last time.

Forgot to grab a pic, but put it down for it's 2 hour nap.
Pulled it and let it nap for an hour and a half. Slightly tough and dry, but that's being not picky as it was awesome.
IT was 197*
