I took out a half rack of bb that I got cheap at the store and 3 spare ribs for tomorrow's smoke. Plan on doing the bb with a 2 2 1 method at 225. Will this be good to do with the spare ribs as well or will I be better with a 3 2 1 with them?
Usually baby backs get the 2-2-1 and spares get the 3-2-1. Keep in mind those are just General guidelines and in no way hard and fast times. Too many factors in cooking to go only by time. (Size, weight, thickness of meat, cooking temp, starting internal temp of meat, wind, opening the smoker, etc.) They are done when they have reached the tenderness you like. You can check that with a toothpick or the bend test.
