Smoking a Pulled Pork.

At 8:00am I got the fire started with Kingsfurd Hickory charcoal and 1 Hickory Log.  I finally got both Pork Butt's in the smoker a little after 9:00am.  Everything seems to be going fine right now.  I took this pic of both Pork Butt's in the smoker around 1:00pm, so about 4 hours into it!

If I remember right it takes about 1 to 1 1/2 per lb?  Plus if I remember correctly about 6 hours into it you wrap them in aluminum foil?  Just wanted to check, couldn't remember?  I think Final temp is about 165?
 
Final temp should be 195 to 205 for pulled pork. ,When its ready you should be able to easily pull the bone out.

I don't wrap mine, I like the bark better left unwraped. I also spritz it every hour with apple juice. When you take it out wrap it in foil and towels for about an hour to let the juices redistribute throughout the butt. Enjoy
 
I just put mine in a bit ago, it will be there for at least 14 hours as I have never had any done before that. I go to 190 plus for pulling.

Well I smoked both them for about 11 hours and pulled them at about 190 temp.  I wrapped them in aluminum foil about 160.  They turned out great.  The meat fell right off the bone and melted in your mouth when you ate them.  One I put rub on the other I left plain.  Mom and my brother hate it when I put rub on meat, they say you can't taste the meat when you do?

Here is the finished product.  I have tried Pork Butts about 2 other times and this is my best turn out!
