Hey all, I'm from Ontario, Canada. I'm using a small round charcoal smoker. I'm in the process of building my first smoke shack, out of cedar right now.
I did competition BBQ at ribfests all over southern ontario for a few years and have just started to smoke on my own in the last couple of years.
My best smoke so far was for my twin daughters first meat, I smoked a gorgeous moose roast, then puréed some for them, they loved it, and still go crazy for anything off the smoker but wild game especially (they're not even two yet!)
