I usually season my meat the night before i cook. Roughly 12 hours before it goes in the smoker. Im having a big get together and i prepped the meat 48 hours before i will start the cooking process in hopes to get more flavor into the meat. It has been roughly 24 hours and when i open the fridge i get a powerful smell of seasoned beef. Has a smell of garlic and pepper. Is this normal or is the meat going bad? The meat is wrapped tightly in cling wrap. A quick response would be great as i am cooking in the morning. Hopefully i dont have to get new meat.
 
As long as the meat stayed below 40* you are fine. I always season and wrap in plastic wrap and into the fridge and I can always smell it within a few hours. Keep it cold and you will be fine.
