Hello everyone.

I've been reading these forums for a while, but in general I'm a serious beginner. My dad has been smoking stuff for a while, and I've always enjoyed it when I've gone to visit. So a couple months ago, he (in his slightly shortsighted way) got one of the ECBs. I've done a few things on it now, but I am definitely still learning. Ran the grill out of propane, so used it as a grill to do some chicken, which was good, except for the little too much smoke from not letting the charcoal get started enough. (I now understand what people mean about Kingsford charcoal having an odd taste, and no, this wasn't the match light stuff.)

Second experience was with a 6.5 lb pork butt, and man oh man, do I have some practicing to do on temp. regulation. It didn't really turn out well, and I had to try to finish it in the oven. Overall, didn't have the ability to let it cook long enough to render out enough of the fat. But that was ill preparation on my part. (Also didn't take into account how long to cook the thing.)

But my wife is willing to let me experiment, so I'll take another crack at it, when I know I have time to let it run. I'll also have to look at other charcoal varieties to see if they're any better.

I am now working on the modifications to this thing to see if it can be salvaged. (Enough others say it can, so...)

Glad to have found this place, and hope to have some good reports to give soon.

I remember sitting in your shoes. My wife lets me experiment on all this stuff as long as i stop bothering her...wahahha j/k

In about three months and 45lbs fatter you will have this down. Downside to practicing a lot is CARDIO. I now have to work out extra to make sure one of the people on here dont look at me to be their next smoke.

Everyone on this site is so great and will help in any way possible.
Don't feel bad about ruining a smoke, we all have at one time or another.
Stick with the site and stick with the smoke, you'll get it.

Welcome to the forums, I am a beginner as well. In reading the charcoal forums, a lot of the people here recommend Lump Charcoal over the briquettes (like Kingsford).

I still have a bag of Kingsford left, but once I am through, I am going right out and trying some Lump Charcoal. Hopefully that helps a bit.

Temp regulation is tough, and as you read on, it is a different experience everytime you smoke. Wind, outdoor temperature etc... always has a different effect on your smoker.

Steve, think next one down. The $35 one.

I'm currently working on building the legs for the fire pan, and then to get another thermometer or two.
 
Welcome. Just remember that we were all once like you. Ask lots of questions and practice alot. Get your smoking down to an art with your favorite spices, rubs and BBQ sauces. Focus on your meats first then you can create your own signature sauces, spice, ect...After you get good at smoking
 
Hello Justin, and welcome to the SMF. Don't underestimate that ECB, a lot of great Q has been the end product of that smoker. It's all good my friend.
 
Welcome Justin to SMF, glad you found us. Learn to use what you have, and as time goes on you will know more of what you want, if anything. I started back in the later 70's on a Luhr Jenson Little Chief. Turned out some good tasting smoke on it.
