Hello everyone.
I've been reading these forums for a while, but in general I'm a serious beginner. My dad has been smoking stuff for a while, and I've always enjoyed it when I've gone to visit. So a couple months ago, he (in his slightly shortsighted way) got one of the ECBs. I've done a few things on it now, but I am definitely still learning. Ran the grill out of propane, so used it as a grill to do some chicken, which was good, except for the little too much smoke from not letting the charcoal get started enough. (I now understand what people mean about Kingsford charcoal having an odd taste, and no, this wasn't the match light stuff.)
Second experience was with a 6.5 lb pork butt, and man oh man, do I have some practicing to do on temp. regulation. It didn't really turn out well, and I had to try to finish it in the oven. Overall, didn't have the ability to let it cook long enough to render out enough of the fat. But that was ill preparation on my part. (Also didn't take into account how long to cook the thing.)
But my wife is willing to let me experiment, so I'll take another crack at it, when I know I have time to let it run. I'll also have to look at other charcoal varieties to see if they're any better.
I am now working on the modifications to this thing to see if it can be salvaged. (Enough others say it can, so...)
