I arrowed a 300lbs pure Russian Boar sow in October and just got my meat back from the butcher. I rubbed it yesterday and took it out of the fridge for two hours this morning. I got it in my Cable's Magnum Pellet Smoker at 08:30 @ 275F. Wish me luck, I hope this turns out. I'm not sure how the wild will be compared to the domestic.

Wild, feral or even heritage hogs taste nothing like store bought pork. The FLAVOR, mostly from fat, has been bred out of domestic feeder pigs since the 70's. Your meat from that sow will taste Porky. Some will say gamey but the flavor would be totally recognized by your Grandparents as what pork used to taste like. Your Rub and BBQ Sauce will go a long way toward easing your taste buds into appreciating the stronger flavor.
I grew up on store bought Chicken. In my late 20's a friend gave me a pair of chickens he raised on his small farm. I way blown away by how much more intense the " chicken " flavor was! Some dinner guests asked if it was Pheasant or other Game bird. I told them no, just chicken raised like Grandma did it...JJ
