Prime rib for cousin form NY city with Q

    Now my cousin Jeanie from the city came into town on her way to some place to study the oysters. She works for the corp of engineers and she has to go to this place called Apalachicola or someplace like that for oyster. So I happen to have a 3 bone in primerib and thuoght she might just like one. Then our kids had some oyster so I thought I maight make up some Rock-a-billy oysters too. So here we go with the meal, now we are alittle short on the Qview for the excitment of the feast. Oh yea the beast feast went for them expecting 200 to serving 523 people and let me tell you I was cooking everything I could get my hands on. But thats another story. Here's the rib first a litle rub of some salt pepper and garlic.

    Now I get oyster duty so a shucking I will go. Now this is all the Qview of the oysters but I was busy after the beast feast serving all them folks and then come home and smoke this hunkof meat for my cousin. Now I put some spinach, archokes, and then some italian mixture of cheeses then grilled them over really high heat on the regular grill till boiling doneness.

    In the smoker with some potatoes.

    Out of the cooler and ready for the knife.

    Sorry for the lack of good sliced Qview on this whole dinner but we/they were hungery and the food looked so good we had to dig right in. Before the Qview. So here's a leftover steak in the morning. Now My cousin brought me some Bialy's from Kosar's it's an old timey jewish bakery that has the best bialys in the world. So I'm going to make some bialys and fattie (from jobsite lunch) with a pouched egg and some hollandaise sauce almost like Jeanie (cowgirl) made the other day.

    So sorry for the lack of Qview but it was a great dinner and she promises me another trip to Pete Luger's for the as she puts it "an almost as good as this steak steak" in brooklyn before here wedding in May. So thanks for looking.

    I LOVE doing Prime Ribs. Yours looks great.

    I have got to find me a place to buy them with a little bit of a discount.

    Sam's is OK but still paying over $30 for one there...

    SO what TEMP did you take this one to?? I pulled my last one after it broke 160 and thought I'd wait till 165 next time.

    Sounds like a great meal. Just gunna have to break down when we get our tax money back and buy myself a prime rib roast to smoke.

    Looks great - smoke the oysters also? Simple smoke or is there a secret to it?

    I'm sorry I forgot to give you some of the details. I smoked the meat with some apple chunks and chip mixture. The smoker was set at about 240°-250° and I took the meat to 140° internal temp for a 4.5 -5 hour smoke and then it was into the cooler for about 45 minutes while I grilled the oysters like the Acme oyster house in New Orleans in the French Quarter. Everything was very good and was enjoyed very very much by all.[​IMG]

  12. Nice looking rib roast. I did one for Christmas and it came out real juicy. Too juicy and red for the wife so her pieces went into the microwave for a few seconds. Everybody else enjoyed it.
