Newbie in Waterford, MI

    Hello folks,

    Just got my first smoker, a 30" black MES, last week, and hit the ground running this past week with a smoked pork butt, some ribs and wings, a smoked ham and a couple fatties, then a brisket and another pork butt tomorrow. Yes, I like to dive right in and see what happens with my food experiments. I read quite a bit beforehand though, so I didn't really screw anything up too badly yet. :)

    Anyways, saw this forum for newbies, thought I'd toss my .02 in, and get started reading the forums. I live in Waterford, MI. and in addition to my new hobby of smoking, I also enjoy craft micro-beers, fixing and restoring pinball machines, and NHL hockey. Drop a line if you're in the area and have some advice or like to play pinball.

    My thermo read 180 when I took it out. I let it sit on the counter for a 1/2 hour uncovered before shredding.

    Have you tried the cooler and towel method?

    Welcome Mick. I like your style, jus kind of jump in and make an attempt and cross your fingers.
    I have done many a smoke with not real frame of reference, spice it up and just kind of go with the flow.
    Just smoke it up and smoke it up and see how things go.
    Great that you joined up on the site, no doubt that you will learn a lot and I'm sure contribute a lot as well.
