Hey my name is Jason. I am from middle Georgia. I have been smoking on a barrel smoker and have recently purchased a masterbuilt vertical gas smoker. I have not use it yet but will be giving it a test run this weekend. I have read a lot about it and I see a flaw being the wood tray. I have heard use a cast iron skillet but instead I think I'm going to use the wood tray and just wrap it in aluminum foil. I have never used gas so any tips would be greatly appreciated. I am smoking a 12 lb boston butt and probably some ribs.
