new to smoking

  1. Hello everyone. I bought a mes for my husband for christmas. We live in falcon colorado altitude is about 6900. Do we need to adjust our temperature because of the high altitude. Also i want to smoke some ribs and chicken brats for him today while he is at work. Can anyone help me on times and temps. Thank you for the good info I have found on this. Go Broncos. We also own a traeger but we never really used it as a smoker we just used it as a grill. Any ideas on the traeger would help us out this summer.

    Glad you joined the group. The search bar at the top of any page is your best friend.
    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

    On the ribs try a 3-2-1 for spare or 2-2-1 for BB.

    Welcome! Do what David said and you'll be great.

    Now, about the brats, are they fresh or do they have cure in them? If fresh, you should cook them at a higher temp to cook fast enough to get them into the safe zone. If they have a cure, carry on with the plan you have.

    For the ribs, run the MES at 225-250 until done.

  4. Thank you david. This is probably a stupid question but you put 2-2-1 on BB. Would that be for baby back ribs
  5. Thank you crankybuzzard. The chicken brats are fresh. Would they be ok at 250. And how long. David said 5 to 6 hrs on the ribs. Do you know how long on the brats.

    Fresh brats need to be grilled, poached, or pan fried. 250 may be a bit low for them.

    BB is baby backs. 2-2-1 means 2 hours in smoke, 2 hours wrapped in foil in the smoker, then 1 hour out of the foil back in the smoke.

    I'd check the ribs in the foil after 1 hour, too long in there and they may fall to pieces on you!
