I am looking to get into the smoking way of life, and have a few deer awaiting to be cut up and next to them I have some bratwurst and summer sausage seasoning, and a new smoker, sausage stuffer, and the whole works...but since I have never done it before, I was wondering if anyone can give me some pointers on what i should be looking for, and what I should be doing I would greatly appriciate it. I am currently in La Crosse, WI.

Well, I almost didn't need to cut up the last one. It was about 2 inches in front of my car, Friday night, before I got stopped.

Mmmmmm, woulda tasted good, but been kinda expensive.

I have family in Nekosa and Stevens Point and a good friend in La Crosse. Gee is Santa still wearing Green and Gold or has it changed yet to Red and white?

I'd be happy to help in anyway if you can give me a bit more information about the type of equipment your using. For example:

What kind of smoker? Coal, electric, wood, propane? Vertical, horizontal? Brands and models help too.

What kind of sausage stuffer are you using? Grinder/stuffer? Vertical? Horizontal? Again Brands and models help.

What kind of sausage did you make premixed spice or from a recipe?

What kind of casings? Collagen? Hog? Sheep?

Hiya Bowhunter and welcome to SMF. I was born and raised in WI and went to school at U-W Lacrosse. I was just telling DeeJay the other day about pushing my bike up Grandads Bluff and then riding it down after resting at the Alpine Inn.

If your bratwurst spices give you good results please let us know what they are. I could kill for a good brat with saurkraut. And would you believe they have this WHITE cheese here on the east coast that they call cheddar.
