New smoker from Phoenix, Arizona - though I've been grilling on charcoal and gas grills for many years - no talent, just throwing a steak or burger on the grill and burining it. <G> Recently purchased a Weber Performer Platinum 22-inch charcoal grill and have done some pulled pork and ribs. Everything exceeded expectations. Got interested in making and smoking sausage, so bought an STX TurboForce 3000 Series electric grinder, and a 5-pound stuffer (after wrestling with using the grinder stuffer).

For smoking, I converted a Brinkmann vertical gas smoker/grill to cold smoke sausage, by putting an electric hot plate at the bottom for the 130-degrees and then move the sausage to the Weber for continued smoking. This has been satisfactory, and after going through 5 attempts (at five pounds each) have finally arrived at a recipe I like. Am searching for a recipe that mimics Rudy's Country Store (Texas, Oklahoma, and Arizona) sausage.

Since I'm retired, this is just for a hobby to go along with our RVing - am looking for an electric cmoker that is short enough to throw in a motorhome compartment and take camping with us.
