My Mini WSM build

    There are a lot of threads about these builds so I won't go into too much detail. But here's how my mini build went.

    First thing I did was make the charcoal basket. Two 3 inch strips of expanded steel, secured to the Joe charcoal rack with stainless steel wire.


    I used 1/4" x 3/4" stainless steel bolts with nuts, washers, and acorn nuts for the grill rack support, spaced 14.5 inches apart (top). Below this I installed two 1/4" grommets for the temp probes.


    I used a Smokey Joe gold with a 3/4" adapter for the BBQ guru (right). The other Joe holes, I plugged up with black iron 3/4 inch plugs. (left)


    I used the 32 qt Vasconia tamale steamer for the pot. It fit perfectly inside the Smokey Joe. I only used the steamer insert for a diffuser. (Ketih's and Case's suggestion) After coating the inside of the pot with a little oil, I fired it up to season.


    The BBQ guru did occasionally overshoot the temp, but not by much. This was especially true right at the beginning when it was stoking the fire a lot to come up to temp. Once it leveled out it held temp VERY well.

    After a three hour season, I threw on a chunk of cherry wood and smoked a small tri tip. (rubbed with Scarbelly's java rub) Learning from my earlier experience, I set the Guru down to 215 degrees so if it overshot the temp again, it would level out sooner.


    After reaching 120 degrees internal (I like my steak rare!), I removed the steamer pot, and did a reverse sear.


    It came out great!


    It was soooo easy, with the Guru. But what really blew me away was the small amount of charcoal I used. The mini burned for about 4 hours total. Here is the amount of charcoal I started with.


    Here's what was left after 4 hours.


    The fire snuffed really quickly after I closed the smoker back up, so I'm very confident that the build is tight. The black iron plugs really do a nice job of closing all the Joe holes.

    Nice job.  I've been thinking about building one of these for my hunting camp.

    I built one too and really like it. Just some input, if you colk at a higher temp for chicken and such, the stock diffuser plate that comes with the tamale pot will warp. Mine did and i just replaced it with another weber grate(10$) and put a disposable pie plate to diffuse heat and catch drippings.

    Thanks! Once you get all the parts, it really is easy to put together. I had it all done and ready to go in about 2 hours.

    We do love the mini's around these parts. Great post and build! I ususlly say you're gonna love it. . But you already do! :biggrin:

    I primarily cook chix on it and cook 350 and up towards 400*  countless times and mine isn't close to warping.   Oh, let those drippings go to the coals....sooo much better.

    Nice build suie!    I also use the plug  especially if i use the Guru or Party q...just so it seals good for temp control.  It soon won't be looking new  after a bunch of tasty mini cooks  lol !   You'll have a nice build up of sticky stuff in the lid but it eventually stops sticking.  I only clean the outside occasionally with some degreaser especially around the top vent and scrape the diffuser clean and shake it out.  Mine probably takes a little more use than most but i know it takes a licking and keeps on ticking!     Have fun and enjoy your new toy!   Keith

    Great job on the mini! Great first smoke too, the tri tip looks fantastic!

    Thanks Keith, you were a great help! I'm sure it's going to get really dirty lol...I just threw some beef ribs on, those should grease it up good. [​IMG]
    Thanks Case, I read all your mini posts, and they were a huge help!

    For the next steps, I'm making some stencils for a paint job, and will likely be adding a 2nd rack.

    Looks great.  I'm reading as many of the mini build threads as I can.  

    So, what's the deal with the charcoal basket?  I see some people do a basket and others that skip it.  Is it mainly a personal preference thing?  Or does it do better for some types of smoking?

    The charcoal basket helps you burn cleaner and hotter hence you will have better smoke and use less fuel.   The expanded steel costs about 10 dollars so it's not a big expense.  Folks that didn't do it are just missing out.
