My brisket is done too early

    My 14lb brisket cooked in 11 hours, I've got it in the cooler with blankets.  Supper is at 6 and its 9:30 now. I've had a brisket in the cooler for 6 hours and it was great, but 8.5 hours seems too long. Any suggestion? Thanks Chuck
     
  2. If you have access to an oven, warm the oven to 180-190 and put the brisket in about 2 hours before you want to serve. That should slowly bring it back to temp.

    Agree with oven on warm...just make sure if foiled it has some liquid in there to stay moist.
