I bought a pair of pork butts to smoke on Sat. but I didn't end up getting them on the MES until Monday.
Bought "Bad Byron's butt rub" at a local market just to try it out. Not too bad!
Rubbed the butt with mustard and the rub. Injected it with apple cider vinegar, worchester, spiced rum, tropical melon liquor and some pineapple juice. Wrapped it up and sent it to rest for the night
Got up at 4am to turn on the MES to 230 and by 5 i was back in bed. Loaded it with Oak every 1-2 hrs.
I also made a batch of Dutch's Wicked Beans (a staple on our table) some ABT's with cream cheese and cheddar.
The beans were great as always and the ABT's turned out great. Everything fnished about the same time (thank you very much) And most of the ABT's were gone by the time the meat was done resting...
I also made a batch of BBQ sauce and I used half the amount of molasses and it turned out a nice tangy sauce! Best Yet.
