keeping a steady temp

    Hi everybody my name is tom and im from western pa im new to this site and kinda new to smokeing i just bought a new oklahoma joe smoker and im having trouble keeping a steady temp i sealed up all the leaks and still cant figure it out Any suggestions??

  2. If all of your air leaks are for sure stopped you need to keep the top vent wide open and adjust the heat with the bottom vent. You will also have to adjust the amount of fuel you add at a time. You will need to make small adjustments with the bottom vent untill you find out how it responds. Chicken leg quarters is always a good thing to smoke while you are figuring out how to use your smoker as they can take wild temp swings.
