Hello

I'v been smoking using a Masterbuilt electric Sportsman Elite for a while but I just bought a Oklahoma Joe Highland Offset smoker yesterday so I thought I would join the Smoking MeatForum.com in order to know a little more about Offset smoking. I read a few posts about "seasoning" and I plan on doing that after a few mods OI bought from Amazon show up. I ordered the fire box and smoker door gasket material, HT / RTV, a second Temp gauge, 3" 90% elbow for the chimney. I am hoping that is all I need. I have seen the heat heat deflectors and I hope I don't need that. They are a little pricey! Anyway it looks like there is a lot of info here and many nice people. I am looking forward to learning the craft of true offset smoking. The electric works ok but I need more :-).

Hope your going to send in some food pics and get a few "likes" along the way.. Everyone likes to peak into everyone else's food world. haha.. have fun! Get into the area you think best goes with your questions and hopefully people chime in.
