I got the ECB modded out except one thing.. I have pictures, but will post later.. I did the cure smoke on Saturday. I think this weekend I'll attempt my first smoke.

I'm going to do a pork shoulder, but I can't find how hot I need to get the smoker or for how long. Help?

I like to do pork shoulder at 225.  A rough time estimate would be 1.5-2 hours per pound, but it's much better to cook to an internal temperature (IT) rather than for a set time.  If you're going to pull the pork, shoot for an IT of around 200.  If you're going to slice, maybe 190.  Of course, you'll need a meat thermometer to cook to a specific IT.

    Ok here are my mods:

Legs on the outside. I got 4 bricks. Two long ways on the ground and then 2 on top. Found out today, I can probably get away with one level:

My new thermometer. It's a Brinkmann for a gas grill:

    Finished product:

My first Q. Pork shoulder. This was at the 2 hour mark:

I didn't get any of the final product. I eventually had to finish it out in the oven. I couldn't get the IT over 160 on the smoker.

It held good except for the last hour.. It'd hold and then it'd drop.. It was like the wood was burning too fast.
