Hot Ribs

    I tried to smoke some pork ribs yesterday, I used Myron Mixon's recipe but the ribs are too spicy. Is there anything I can do to take some of the heat off? I did three racks and don't want to waste them.

    Possibly.  Would help a lot if you explained exactly what you did to them.

    Over night in this marinade

    1 liter ginger ale
    1 quart orange juice
    1 1/4 cups soy sauce
    2 cups salt
    2 1-ounce packages dry ranch dressing mix

    4 hours with this rub

    1 cup (packed) light brown sugar
    • 2 tablespoons chili powder
    • 2 tablespoons dry mustard
    • 2 tablespoons onion powder
    • 2 tablespoons garlic powder
    • 2 tablespoons cayenne pepper
    • 2 tablespoons kosher salt
    • 2 tablespoons coarsely ground
    • black pepper
    then smoked over apple wood for 2.5 hours at 200

    finished with 2 hours at 225 with no smoke

    Looks like the heat is coming from the rub (the dry mustard and the cayenne).    Not sure what would actually neutralize those.  You could always just rinse the ribs off .

    I'm thinking about an apple juice bath for them

    Not sure about how well an actual bath would go over.  Might make them soggy.  Personally, I'd go with a quick rinse or even a spray down if you have one, then pay dry with a paper towel.

    Whew! Lots of heat factors going on there. You could also pull the meat off the bones and trim off the spicy outer layer. Then use the meat in other dishes such as enchiladas. But it would be worth a try to rinse or scrape some of the rubbed area. Good luck and let us know how it turns out.

    Kidding aside, this would not apply to me as I am an incurable chilli head. I like to spit fire. I love it when it feels like my eyeballs are going to explode and I absolutely love when mucus flows from my ears. I think I would strip the meat off and make a sweet stir fry with some pineapple and or sweet peppers and sweet onion. Teriaki sauce is real sweet. Sweet beats heat. The only other thing I would think would work is chasing each bite with ice cream. Starch helps kill heat, so rice, cornstarch or even bread helps. Really I think some kind of Asian stir fry is your best bet.

    I ended wiping the rub off about half of them. Just to keep the women happy! Thanks for the advice guys!
