Greetings from Durham, NC! My name is Jason and I am a newbie to smoking (but, I have been grilling for years). I have finally decided to take it to the next level and try my hand at smoking meats and cheeses. I am using a 3 burner gas Char Griller with a side fire box. I have the fire box seasoned already. Anyone with a similar rig please feel free to pass on some pointers! I look forward to hearing some great tips and picking up as much information as possible.
