Hi - Great site - new guy

    Hello - I have a new Masterbuilt 30" gas smoker that my wife got me for Christmas and have found this site to be very helpful in getting started.  Looking forward to learning more.

    I live in Southeast Missouri - Sikeston - to be exact and am in the process right now of seasoning my smoker.  I have also been experimenting with finding out how it heats, smokes, etc. before I put in my first meat.  Got the temperature dialed in based on the valve settings I can tell approximately what the temperature will be - now my problem is too much smoke.  The chip pan is useless and have used a cast iron skillet and wrapped the chips in foil - but I am still getting way too much smoke and it only lasts for a few minutes - and that's all she wrote.  I opened up the foil and have charred chips - what do I need to do?  How much chips should I be using or is the only way I can get a good smoke is to use chunks?

  2. I wish I had answers to your questions, but I did want to say Welcome to SMF!   Someone will be along shortly to help you out and I see there are alot of people using a MES on here.  Good luck and again - welcome!

    Welcome to SMF - go to the MES section in Smokers and you should find some mods for the smoke pans that have been successful for others

    Actually, I think the chip pan does pretty well, except for the fact that you have to reload it every 45 minutes. I did however purchase an a-maze-n smoker which is by far a better avenue to get your smoke. You can get about 5 hours with it with a little smoke, or almost 3 with a heavier smoke. Anyways, welcome aboard and good luck!

    What temp do you have it set at? It sounds like it is so hot that the chips are burning too fast. If the temps are in the 225-275 range and the chips are burning up right away, I would try chunks. I don't have a gasser, but I'm sure someone will be along shortly with better answers.

    First welcome to smf, now those chips? Maybe try setting them off to the side just a little. You don't have to set them on top. You only want them to smolder not catch fire.

    First off Welcome to SMF! Lots of good people and info here. If you can't solve your chip problem, You might get you an A-Maze-N smoker. He's one of the sponsers here and they work great. Good luck and welcome to your new addiction!

    First off Welcome to SMF.  You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

  11. welcome aboard! one of my smokers is gas as well (different Brand) my issue was when my temps were correct 225-275 i had very little burn on the wood (very mild smoke) regarless of chips, shavings or fines and every combination above. i now use a smoke generator with that particular unit. this may sound simple but you did not indicate if you had tried soaking the chips prior to putting them in the pan...just a thought.
