So I am new to the thread and some what new to the smoking meat game. Usually pork loin or chicken on a kettle type grill. I just bought a charbroil 1280 offset smoker and need to do the tuner plate mod. I want to try all types of meatso fire away with any and all advice. I am from Wisconsin just north and east of Minneapolis
