Figured I'd say hi..... I have smoked a few briskets and racks of ribs in the past as well as turkeys at T-Day, but nothing serious..... Having grown up in Washington State, I can smoke a MEAN Salmon. I currently have a Brinkman Bullet Smoker and a Lil'Chief Electric Smoker (for salmon) My neighbor is a Demon on his smoker and does briskets great. I am trying to learn form him. I get him good sources of Pecan wood and he gives me recipes and secrets... I live in Sachse, TX. NE of Dallas. I look forward to learning more here and would like to build a smoker in the future.
