    I have been lurking here or a little while without joining but figured I should jump in and say hello.  I have been smoking your basic stuff like brisket and ribs for a number of years but never had a good quality smoker that I felt I could get really creative with.  I had an early Christmas this year and got a Camp Chef smoke vault 18 for christmas and I feel like a whole new world opened up for me!  On day one I tackled an 11lb turkey thanks to lots of posts on here. I had some issues with the temp on my smoker but I will start a new post on that. The turkey turned out great though, better than expected. I also have a Brinkman electric smoker that I have realized works best for smoking trout.  It seems to not hold the temps high enough during the cold weather to smoke anything else. Looking through the posts I'm feeling a bit overwhelmed, ABT's Fatties.....what does it all mean?!?  I have a lot of reading to do and I am super excited to learn from you folks and try so many new things. 

    Today I will be doing some smoked mac n cheese and potatoes!

  4. Glad you joined the group. The search bar at the top of any page is your best friend.
    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions
    Post it and you will probably get 10 replies with 11 different answers. That is
    because their are so many different ways to make great Q...

    Thanks for the welcome!  Im am very much looking forward to the 10 different replies with 11 different answers [​IMG]  I have already learned so much just lurking in here and I can't wait to learn more.
