Good morning. So through research of methods I found this his forum. Loved the info figured I'd join the conversations. I have been a butcher most of my life and enjoy eating and cooking about anything. I love having family and friends over and testing the new recipes on them either from the pan, oven, grill, and since Xmas, the smoker. The meatshops I've worked at have always dabbled in smoking so I picked up skills from them. I got a bone in picnic going this morning so hopefully you can check out my progress on there.
