I'm not sure I have ever even eaten authentic barbecue, just meat
charred quickly over intense heat with lots of bottled sauce ladled on, but am about to, I hope. The learning curve looks pretty steep from where I stand right now, but I like a challenge and an opportunity to learn some new cooking techniques. MES 30 from Tractor Supply is on its way, the price seemed right for a beginner. Accessories, MAV 732 and AMAZN pellet burner due tomorrow. Reading this forum has given me confidence to move forward. Now if only the polar vortex will hold off so I can get some practice in...
 
I would suggest finding someone on the forum using your type of smoker who has a recipe that has ingredients that you know you like. Copy them and you should have instant success. Believe me, it will be a lot better than meat charred over a searing fire with store-bought BBQ sauce.
