Hello from Central Florida

  1. Hello, my name is Bob and I live here in Central Florida near the Space Center. I have been involved in Smoking food since the mid 90's shortly after I left my stint in the Army. I joined a friend who was already catering parties on the side of his regular full time job.

    He started with a trailer from an old pull behind camper that had an offset wood burning smoker on top of it as well as a propane burner for heating water or boiling corn and so on. The trailer had a 2x4 floor that we stood on when working the meat on the racks. Eventually that one saw its last cook job and we retired it to the local dump. Just prior to doing that he had a 750 gallon underground propane tank given to him by the local fire dept and that became our next smoker. We had a friend who took a welding course at the local community college and he asked if he could build our smoker as his class project/final. He passed !!!! Since then we have cooked Pork butts, ribs, brisket, fish, turkeys (smoked and deep fried), sausage, whole hogs, burgers & dogs and many other things as well as all the sides needed to provide full meals for wedding receptions, highs school reunions, and a host of other events. Our largest was 1200 people for a Safety Day on the Space Center. We cooked pork butts for 4 days straight to have enough to feed everyone. That one was big enough that we had to enlist the help of a buddy who owned a local restaurant and also catered.

    Recently I acquired a grill built approx 20 years ago and was used by a local politician to his election parties. I have another thread somewhere here with pictures.

    grew up in satellite beach,  love the area,   I got a brother lives up titusville     real nice , beach closeby indian river to go on orlando is close

    Welcome to the forums, Bob!  You've found the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks here who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.
