Hello everyone. My name is Scot and I live in Knoxville TN. I have a co-worker who has been smoking for years. He brought me some prime rib he smoked and I was hooked. 2 weeks ago I bought a Masterbuilt electric smoker, for the ease of it, for now. I thought this might help my learning curve. I found this site on a google search and have learned tons of things in 2 weeks. I have a smoker full of country style ribs going right now. I will have lots of goofy questions in the weeks to come so please be patient with me...Thanks and I am looking forward to hearing and learning from all of you...
 
Welcome to the gang here at SMF. You will be putting that MES to work. I hope you will show us some pics of the country style ribs!

You will learn lots simply by reading. As you have probably seen, if you have a question, there are some pretty smart guys (and gals) on here than can answer just about anything.

BTW...I don't live far from you. Just over the river in the Boyd's Creek area. I can throw a rock and it will land in Knox County.
 
Welcome to the SMF volfan! As you've already found, there is a wealth of information available on this forum....and if you can't find it, someone is more than happy to answer any questions you may have. Lots of kind folks here willing to share their knowledge.

welcome to the forum. there are no such things as goofy questions. and we have all been in your shoes as far as just starting. good luck with your smoke, take some pics and post them for us to see.

O.K. folks, I'm smokin country style ribs...some are not as thick as others. Been in the smoker for about 4 hours. Some are at about 175 and some at about 160...do I take some out or let them all ride ???
 
I'd take out the 175's and place them in a cooler they'll stay warm till there all done
 
What they said.

Wrap them in aluminum foil and a towel and put them in a cooler. This will keep them warm and allow the juices to redistribute.

I use a small lunchbox type collapsible cooler.
 
If it was me, I would wrap em in foil tightly, and put em back on the smoker till they hit 190, then rest em in a cooler. Some will get done before the others. Its just pork butt cut into strips!
