Hello everyone. Long time lurker now but posting first time. I want to say big big THANK YOU to Todd for his AMAZING amnps smoker and great customer support. Also big THANK YOU to this forum contributors for sharing great tips on how to cure and smoke. I spent almost every weekend at summer house smoking something new and got so hooked that I brought MES40 back to my apartment and continue smoking on balcony. Our absolute favorite are buckboard bacon and cold smoked salmon. Also when at summer house I also use smokinator for stuff like ribs and brisket. Or 1/4 of a suckling pig.
