Do you think freezing them, then pulling a vacuum in the uMAI bags work?

Would the Bond between the meat and the bag form when they thawed?

I'm now going to have to try something like that.  I will probably start with beef sticks first.  Baby steps.

you wont be able to make them into pretzel shape if they are frozen. And you dont want to freeze meat that has fermentation in it, will kill the Lactic Acid growth. The bond will happen because of the water content already in the meat.
