First UDS cook with qview

    Finished the UDS build on Thursday...Just took 20 pounds of Pork butt off after an 11 hour smoke.

    A quick After Action Review:
    1. TEMP; I expected to spend a fair amount of time getting the temp set. After 30 minutes, it levelled out at 240 degrees... I closed the valve down a bit and in 15 minutes was locked on 225 like a pit bull.

    2. FUEL; 6 hrs into it, I could not help myself but to take the lid off, take the meat out and check the fuel (sure that I would need to add some; didn't!)... only a small area in the middle of the basket was burned! put it back together, temp came back up in a couple of minutes...

    I started with 10 pounds of Kingsford and 10 small chunks of Hickory; here is a pic of the basket after the smoke (about 11 hrs).

    If you have been thinking about a UDS, BUILD IT! you will love it!!!

    Yep I love my UDS. I am bringing it home this weekend to my parents house to show off its skills to them. If you fill you basket up you shouldn't have to add any more fuel unless you are doing a really long smoke. Usually when I am done I look at the fuel left and think how did it only burn that little amount?? They are awesome!

    Now I don't have a UDS but your food looks really good. But what temp was the meat when you took it off??? YThen I see you didn't use much of the charcoal either.

    I took this off at 180... I was going for "just past slice-able"; my wife likes it that way (and she rarely eats meat, so what could I do?!). at 180 the main muscles pulled apart easily and were perfect for slicing into little chunks.
    Generally I take it off at 180, give it a misting of apple juice, foil it and put back to 200.
    The UDS is incredible with fuel...one load of about 10Lbs of charcoal and a few chunks of hickory and it went for just short of 12 hrs. with a little left over.
    I am a UDS convert!

    Nice uds!! is that a drip pan type thing that goes over your charcoal basket? looks like a cool idea.

    the charcoal basket was canabalized from an old portable propane heater...the "basket" was the safety screen around the heater and the "drip pan" was the top of the heater...it all fit perfectly on a cook grate I had from an old upright smoker! it all worked out perfectly!
