I've got 2 20lb turkey's ready to go for the smoker in the morning. Injecting with seasoned butter and using apple wood with a little bit of mesquite. I'm thinking about 4 hours at 250-275. All my previous experience is with the full bird so I'm curious if my guestimate sounds close for those who have done the spatchcock method before.
