First time to spatchcock!

    I've got 2 20lb turkey's ready to go for the smoker in the morning. Injecting with seasoned butter and using apple wood with a little bit of mesquite.  I'm thinking about 4 hours at 250-275.  All my previous experience is with the full bird so I'm curious if my guestimate sounds close for those who have done the spatchcock method before.

    I usually spatch my birds, 12-14 pounds. I run my smoker at 325, and they take 2 1/2-3 hours then rest 30-45 minutes.

    Lower temps and larger bird you have probably will be a bit longer than you have planned.

  4. Post how your turkey comes out.  I'm interested to find out how the skin comes out when cooking at a lower 275 temp.  Did it come out nicely browned and crisp?  Good luck and Happy Thanksgiving!

    Follow Case' instruction. Take the breast temp to 165   and you won't mess up!

    I usually put my birds on the grill to finish them off and crisp up the skin a bit. :)

    Well, they turned out fantastic.  It was pretty cold here in Denver yesterday so the smoker never really got above 250.  However, 4.5 hours at that temp had the birds at 145 internal temp.  I left one on the smoker for another 2 hours to get it to 165 internal temp.  The other I pulled off early and finished on the grill at 400 degrees.  Within 20 minutes it was ready.   The skin was pretty smokey so we didn't keep it.  The dark meat had great smoke flavor and the breast meat was super moist.
