    After curing how do i remove excess salt before smoking / cooking?
  2. I am going by Bears Step by Step,   rinse it real good and cut a piece out of the center of the thickest piece, to make sure the cure went all the to the center and fry it up for a salt test'

    As Bear said do a fry test. If needed soak in water and try again untill you like it.
