Decided to do a test run with my ECB 2 door moded smoker. My first attempt at smoking with this unit. I couldn't keep the temps up. It was windy that day and I didn't know how bad wind was for smoking... First I'll list my mods then my notes from the test. I do have pics but they are on my phone so I'll add them later.

Mods

Doors sealed with gaskets

Wok style pan for coals

13x13 water pan

Temps were taking with a Redi-Chek Maverick ET-732

Fuel:

Wicked good Lump

Kingsford Hickory added charcoal

Weber Chunk apple

Weber Chunk hickory

6:00PM

Used one Large LOG from the wicked good, placed some chunks of wood around it then filled in with Kingsford. Attempted do do a minion style where I made a small pocket on the right side of the pan for some coals to be fired up in my chimney (about 10) and the idea was for it to burn across the pan. Lit 10 coals in chimney and placed in pan.

6:13 136 degrees smoke was thick and grey outside temp 53

6:16 239 degrees smoke turns thin and blue

6:25 327 degrees

6:30 Opened lower door, added pan of hot tap water shut air vent to 1/2 open temp dropped to 252

6:32 244 degrees

6:40 212 degrrees

6:43 205 degrees opened vent to 3/4 open

6:50 230 degrees

7:00 280 degrees

7:05 277 degrees opened both door to add "food" added 6 brickets. wood chunks were full flame.Shook the tray and closed vent to 1/4 open

8:10 181 degrees opened door for "mob" added 6 brickets, most of the wood and lump was burnt up.  Water pan had about 1" of water in it.

8:25 194 degrees added 1 medium size piece of lump and a handfull of small lump pieces. Shook tray

8:40 201 degrees Topped up the water pan added 12 brickets and shook tray

9:15 235 degrees Opened top door for "mob" added 12 brickets and shook tray

9:20 215 degrees Outside temp 42 degrees

10:15 194 degrees 22 brickets added vent closed to 1/4 open and shook tray

11:03 201 degrees opened vent all the way

11:10 216 degrees

11:20 225 degrees

11:25 212 degrees opened top door for "mob" added 14 brickets closed vent to 3/4 open

11:40 255 degrees

11:50 333 degrees

12:00 324 degrees Wife asks if I'm ever coming to bed... vents shut and test ends.
