Couple of Big Ole Butts

    Well, it's been a hot minute since I smoked some butt, or anything else, so I decided it was time, got two beauties in the smoker, today.

    It's been a battle, seems my asst pitmaster wasn't on her game, when I got home from a quick coffee run the temp gauge was buried, smoke rolling out, and a full blown fire had commenced. But I think I caught it in time, it did sear one of the fat caps, but it had a thick one anyway.

    Q-views shortly, gotta run to the store real quick, hopefully, it'll maintain steady (has been for the past couple of hours)!!

    I got a boatload of summer squash, anyone ever smoked it? Not in a foil packet, that's not what I'm looking for, but more like roasting...

    You sure can smoke summer squash! Do it just like you'd do in the oven.

    😳 I've never cooked it ever... But decided I wanted better food, so I planted a garden (mind you, I don't even have a house plant - I have the blackest thumb ever, I have no clue how my daughter made it to 21!!)

    It started out sedate and calm...

    And then it went crazy...
    This is ONE evening's haul! It's been like this for a week, now!

    Just past the stall...

    Rotated the rack, my sand pan succumbed to the early morning fire-apparently when Lauren replaced the foil over it she inadvertently poured off a bunch of fat/drippings into the sand... So just empty aluminum pans went underneath the butts to keep another fire from flaring up (vertical smoker) - I'm pleased with how well it stayed steady after removing my "temp regulator" - guess I've been leaning on my sand pan more than I realized...

    Pork Butts look excellent .

    I grill /smoke Squash an zuccuni  yellow and green all the time and we love it.Cut it in 1/2 long ways a little olive oil salt and pepper throw it on cook till it still has a little bite to it.I plant my squash in cycles so we have it fresh all year.When new plants start producing I plant more seeds.

    You could never lose your touch with the smoker.

    There are so many things you can do with summer squash. Slice 'em thin and fry 'em like potato chips. Grill 'em on the pit after brushing with apple cider vinegar and butter a bit of Salt and pepper. Slice 'em slightly thicker roll in corn meal and fry med. low till the meat is translucent and the cornmeal is golden. Most folks like 'em steamed/rendered down with onions, diced tomatoes, a pinch of sugar, my Pop loves squash pickles, etc etc etc..... Eat seeds and all, unless the squash is big. Little squash cooks better.  I forgot all about stuffed deep fried squash blossoms.

    Nice butts... great save! There is no doubt they'll be good.

    OMG, I've been stuffing the heck out of the blossoms!!! A bit of feta, cilantro, fresh lemon juice, minced garlic soaked in Olive oil, diced portabella mushrooms and asiago stuffed in the blossom, set in the fridge for 20 minutes or so, drudged in finely grated parm and bit of panko, and sautéed in cocoanut oil... Great on a salad or on their own. Sometimes I just chop up the blossom, douse them in fresh lemon and blend with crushed cilantro and toss in a salad... Yum! They have a great flavor and I'm fairly committed to not eating anything not outta my back yard...

    Great looking butts! Okay so a real good use for those squash is to cut them up into about 1/2"-3/4" chunks and add just before serving to Pazole ((Pasole) regional spelling) which your left over pull pork is great in. Or smoke up a batch of chicken thighs. Shred the meat reserve the skin and bones and make a stock. To the stock add a couple cans of diced or crushed tomatoes, corn, pinto or black beans and once again your cut up squash. Add in your shredded smoked chicken, heat through. Serve into bowl top with cut up tortilla chips 1/2"-3/4" chunks of a avocado and grated cheese, and you have Sopa De Pollo.

    You can use those squash to make "Zucchini" bread. Vacuum packed it will keep well in the freezer too.
