controling smoke on a charcoal smoker? (wsm, backwoods)

I am moving from an MES30 with an amps with the mailbox mod, when im finished i just take the hose off and my smoke is done. I've never wrapped anything. How do you control the amount of smoke in a charcoal smoker? I just got a WSM and plan to build a backwoods clone over the next couple of months. 

Do i have to wrap everything when i don't want anymore smoke?

Do i take the wood out or do i just use less wood? I only used 4 pieces of pecan today when i did some chicken 1/4's on my first cook. 

What about a turkey? I cooked mine for thanksgiving. Took 4 hrs total on my MES, only smoked 2.5-3Hrs and i wouldn't have wanted to go any longer with smoke.
