Chicken Terrine.....

I been watching atomic smoke and had to try this Chicken Terrine....    MY FIRST of many I think....

It was more than a little bland....  I seasoned the 10# pack of fryer hind quarter and more or less simmered them in my electric skillet with the voltage controller at 190...

A double batch in the same skillet ...   Lots of fat and gelatin when I was done.... 

I pulled the meat from 1 hind quarter and stuffed the meat in a pint plastic tub...  poured the hot gelatin / fat mix over it....   into the refer overnight....   took the fat off of the brick of meat...

You can see where I skimmed off the fat layer on the bottom..

I had used up the last of the "Sweet Chili Sauce" so "Huy Fong" garlic chili sauce (Rooster) was what I had...

I think it was too hot for the mild chicken flavor...   Couldn't taste the chicken...  FWIW, I don't use any salt...   just spices and herbs...  Mrs. Dash type stuff...

I've 3 more blocks like that one in the refer...  I'll try other sauces and see what happens....   when my taste buds return to "normal"....

Nicely set Dave. You are saying tasted bland without sauce? Never done chicken terrine, but i imagined should taste nice if one can make soup out of it.

Have you used vegetables, spices in the cookinng liquid? Carrot, parsnip, celery, onion, whole pepper, bay leaf.

One thing that would make it taste much better is some garlic; after you pick the meat add diced garlic to the 'soup' before you add it to thr terrine. Don't over do it though.
 
No veggies or any other stuff...    Only Mrs. Dash seasoning...   Soooo, next time...   There WILL be stuff added....
 
OK....  I just took another hunk of the brick...    No hot sauce or anything...  

It was OK...   with carrots, parsnips, celery etc. in the stock, it should be awesome...  maybe some mustard seed...  Heck, I'll just add all of it..  kind of a seasoning medley....

Careful Dave, I made my first last weekend and now I'm planning more! These are fun to make and can be quite tasty too!
