Hello ! I'm Gene from North Florida..........I live with my family in a little town about 30 minutes south of Tallahassee. I'm in my mid- 40s, been smokin and grillin all types of meat and fish for myself, family and friends my whole adult life. I learned just about everything I know about grilling from my father-in law on an old Weber kettle grill when I was still in high school. Slow and low is the way I approach just about every type of cooking, on the grill or not. I'm an avid outdoorsman and enjoy smoking fish and wild game. LOVE some pork spareribs, or a whole chiken on the grill with beans, tators and coleslaw..............my favorite meal ! I would not say I'm an expert smoker by ANY means. I sure have made my fair share of mistakes. I just like trying new things and improving how I smoke it. I have a couple of Char-Broil, charcoal smoke-in-pits I do all my cooking on, one at the house and an older unit at my hunt camp. I've thought alot lately about designing and building a custom smoker ( I have a very good friend that's a welder ), so, I'm on the look-out for a used propane tank that will do the job.
