Hey Folks! This is my first post. I'm going to be smoking my first brisket with my Bradley 4 Rack Digital Smoker. Here are my questions: 1) What rack do I use? Top, bottom, middle? 2) Fat side up or down? 3) Top air vent fully open? 4) Should I smoke and cook it the whole time until it hits 195-200F or should I turn off the smoke at some point? Thanks!!
