Started with some beef bottom round cut extra thin from the butcher and marinated about 2 hours in a McCormick Grill Mates Mesquite Marinade.

    -----

Sliced up some green peppers, mini sweet peppers, red onions and pepper jack cheese sticks for the filling.

    -----

Rolled everything up together tight and secured the beef roll ups using some silicone grilling bands so that they stayed together on the grill nicely. (My wife did this part, she didn't like how I was rolling them up!)

    -----

Beef rollups and brussels sprouts with butter, garlic, and bacon grilling indirect at 350º

    -----

Beef roll ups, brussels sprouts and garlic toast.

Close up of the beef roll ups...

    Thanks for looking!

  2. Great looking meal I'd take a plate or two of that right now!!!

  3. Looks good!  My wife does something similar with the brussel sprouts except it has cream cheese in it.

  4. MMMMMMMMM.....Yum that looks great!

  5. That looks awesome. I never understood why so many people dislike brussel sprouts, they're really good especially when grilled. Nice cook!

  6. Yum!!  You guys really know how to eat up there!   Finally starting to appreciate the BS's after not-so-fond childhood memories of them...:)   Hey, where did you find those silicone bands? Super handy I would think-

Stretch silicone bands – 20 pack of 2 inch bands – Reusable Food Grade Silicone. Use anywhere butchers twine, string or toothpicks are used! Heat resistant to 600° F, freezer safe, and dishwasher safe. 2 inch band fits turkey up to 20 lb. Use on rotisserie, grill, smoker, deep fry, oven, boil...you name it!

  8. Greetings to Owens-  Just ordered up some of your silicone bands, went & bought a new slicer (I'll pay for that I'm sure, but as they say, it's easier to ask for forgiveness than permission!), and have a stock of beef round laid in.  Game on!!
